Waterford Distillery has introduced Biodynamic: Cuvée Luna, a new flagship cuvée bottling that joins the distillery’s core range of single malt whiskies. This release is a continuation of Waterford’s pioneering efforts in biodynamic whisky production, following their first biodynamic whisky launched in 2021 as part of the Arcadian Farm Origin series.
A Commitment to Biodynamic Farming
The latest release, Biodynamic: Cuvée Luna, is crafted from 100% Irish barley, grown using biodynamic farming practices, and has been certified by both Demeter and the Organic Trust. Waterford now collaborates with six biodynamic growers, reflecting their commitment to producing whisky with the most expressive and vibrant natural flavors.
Mark Reynier, CEO and founder of Waterford Distillery, highlighted the importance of biodynamic methods in creating expressive flavors, drawing parallels to the practices used by some of the world’s greatest winemakers. Reynier emphasized the contrast between traditional whisky production and the industrialized methods that have become prevalent, advocating for a return to older, more natural farming and production techniques.
Crafting Complexity
Biodynamic: Cuvée Luna is made from multiple harvests to enhance its complexity and has been matured in a combination of casks, including first-fill American oak, new American oak, French oak, and vin doux natural casks. The result is a whisky that embodies Waterford’s characteristic artisanal bakery flavors, with tasting notes of green apple, malted biscuits, breakfast cereals, lemon curd, cream, and spice.

Bottled at 50% ABV, Biodynamic: Cuvée Luna is a permanent addition to the Waterford range and is available through Waterford Distillery and specialist retailers at an RRP of £89.95. This release further solidifies Waterford’s position as a leader in innovative whisky production, bringing biodynamic farming practices to the forefront of the whisky world.
