M&H Distillery Unveils APEX Terroir Series: Four Whiskies, Four Climates

M&H Distillery has announced the release of its APEX Terroir series, a bold new collection of four limited-edition single malt whiskies, each matured in a dramatically different climatic zone across Israel. Launching this month across key European markets- the APEX Terroir series offers a rare exploration of how terroir influences whisky maturation.

Conceived in collaboration with the late Dr. Jim Swan, the project reflects his early belief in Israel’s potential as a whisky innovation playground. The result is a collection that showcases the impact of landscape, climate, and elevation on whisky flavor and character—an ambitious culmination of years of experimentation at M&H.

Israel’s unique geography allows for diverse terroirs—desert, coastal, mountain, and Mediterranean—all within a few hours’ drive. Each whisky in the series tells a distinctive story shaped by its environment:


🔸 APEX Terroir Dead Sea – 57.4% ABV
Aged 351 meters below sea level—at the Earth’s lowest land point—this whisky matures in an extremely dry and hot climate, where summer temperatures reach 51°C.
🔹 Tomer Goren, Head Distiller:

🔸 APEX Terroir Jerusalem Mountains – 55.4% ABV
Matured at an altitude of 576 meters in cool, forested highlands, this expression develops slowly in a climate of seasonal chill and moderate humidity.

“Light and fresh with green, herbal notes and a clarity that reflects its pine-forested surroundings.”


🔸 APEX Terroir Negev Desert – 54.2% ABV
Aged at 563 meters above sea level, where hot desert days meet cool nights and conditions vary dramatically.

“Gentle yet active maturation produces a delicate whisky marked by bright fruit and a dry, clean finish.”


🔸 APEX Terroir Sea of Galilee – 56.2% ABV
Matured 154 meters below sea level in a hot and humid environment near the Jordan River. A dynamic “push-pull” climate enhances both evaporation and flavor development.
