Holyrood Expands Elizabeth Yard Range
Holyrood Distillery in Edinburgh has enhanced its Elizabeth Yard range with the introduction of a new Sherry cask-finished rum that blends liquid from three producers.
Holyrood Elizabeth Yard Sherry Cask Edition
The new Sherry Cask Edition is a blend of rum sourced from three independent distilleries worldwide, including single-estate molasses rum from the Philippines, high-ester pot still rum from Ghana, and cane juice rum from Vietnam. This 42.5% ABV liquid is then finished in Sherry casks at Holyrood Distillery in Scotland.
Distillery manager Calum Rae expressed, “Our Sherry Cask Edition rum offers a more accessible option for people wanting to explore premium rum. With notes of foamy bananas, raisins, and red fruits, this liquid is perfect sipped neat, and stands out like an island in the storm when mixed into a cocktail.”
Flavor Profile and Packaging
The rum presents notes of bananas, syrup, creamy boiled sweets, and pineapple on the nose, while the palate reveals flavors of treacle, marzipan, raisin, Demerara sugar, and a hint of candy floss. The bottle shape pays homage to a classic navy rum flagon, featuring a dazzle design inspired by naval ships’ camouflage. The packaging design reflects the origins of Royal Elizabeth Yard and its connection to the nearby naval bases on the Firth of Forth at South Queensferry.
Availability and Recognition
Priced at RRP £34, the Sherry Cask Edition will be available for purchase from the Holyrood Distillery website and shop starting tomorrow (9 February). Holyrood Distillery’s Elizabeth Yard aims to source rums from producers worldwide that use 100% locally grown sugarcane, and the distiller finishes its rums in oloroso and PX Sherry casks, as well as first-fill and new American oak casks. Elizabeth Yard – Traveller Distillery – Ungrogged American Oak No 1 Char Octave was named last year’s Rum & Cachaça Taste Master — the highest award in the competition.
Expansion and Production
Last month, Holyrood Distillery secured more than £2 million (US$2.5m) in funding to support its global expansion plans. The distillery also produces gin and released its first whisky last year.
