Isle of Raasay Distillery has introduced the third edition of its cask strength single malt, showcasing its signature six-cask maturation process.
The whisky is crafted using a combination of peated and unpeated spirit, aged in rye whisky, new chinquapin oak, and Bordeaux red wine casks. This method, known as ‘Na Sia’ (Gaelic for ‘The Six’), brings together diverse influences to create the distillery’s distinct house style.
Bottled at 61.6% ABV, this edition is described as delivering layers of wood spice, candied fruit, honey, and black cherry, with a touch of saltiness on the finish. According to co-founder and master distiller Alasdair Day, cask strength whiskies offer a chance to experience the spirit in its purest form, without dilution before bottling.
