The Lakes Distillery is embarking on a journey of innovation with its latest release, the Apex Collection, introducing two distinct expressions—Velocity and Revolución—that push the boundaries of English single malt whisky.
At the heart of the collection lies élevage, a technique rarely explored in whisky production but deeply ingrained in the traditions of Cognac and fine French wines. Élevage involves strategic maturation methods, such as cask movement and blending, to enhance flavor development and overall quality.
Leading the charge is Apex Velocity (50.2% ABV), a remarkable blend sourced from oloroso sherry casks. This expression accelerates the maturation process, resulting in a depth of flavor and complexity that defies its age. Exclusively available through Berry Bros & Rudd from 7 May, priced at £600, each of the 583 individually numbered bottles of Velocity promises to be a coveted addition to any whisky collection.
Meanwhile, Apex Revolución (52% ABV) challenges convention by emulating the rich textures and flavors of aged rum—without the use of rum casks. Crafted from a blend of spirit aged in bespoke oloroso and Pedro Ximénez sherry casks, Revolución offers a unique sensory experience that transcends expectations. Available exclusively from The Lakes Distillery from 18 May, a total of 702 individually numbered bottles, priced at £600 each. This expression is a celebration of innovation and creativity in whisky-making.
