Fielden Whisky announces the release of Hazybower, the second edition in its acclaimed Fieldnotes Collection – a whisky series inspired by the flora of the English countryside and the biodiversity of traditionally farmed grain fields.
Limited to 1,000 individually numbered bottles, Hazybower follows on from Hedgerow (2024) and continues the exploration of natural flavour led by regenerative agriculture. This year’s release captures the bright, floral essence of summer in the English countryside.
Crafted from a unique blend of heritage rye, wheat, and barley, the grains were grown as diverse field mixtures, including maslin, a traditional method of sowing rye and wheat together. Fermented and distilled with grain in both pot and column stills, the whisky has been matured primarily in re-used American oak casks that previously held Fielden’s signature rye whisky, preserving and elevating the natural grain character. A portion was also matured in a Hungarian oak Tokaji sweet wine cask, adding notes of honey, citrus, and delicate florals.

Hazybower is a tribute to the wildflowers and herbs – including clover, poppies, thistles, and mayweed – that flourish in Fielden’s regeneratively farmed fields. As whiskymaker Chico Rosa explains:
“While conventional agriculture often suppresses diversity, we aim to celebrate it. These plants aren’t just beautiful – they enrich the soil, strengthen the crops, and deepen flavour. With Hazybower, that complexity and freshness comes through in the glass – think fresh-cut herbs, meadow blossoms, lemon tart on a summer’s evening. Balanced by the spice of our rye and a mellow, lifted texture, it’s a sensory journey and a statement of values worth sipping.”
The Fieldnotes Collection is a four-part exploration of flavour inspired by the living systems that surround Fielden’s grain. The first release, Hedgerow, focused on the character of English hedgerows – from floral notes to berries, rosehip, and hazelnut. Hazybower captures the undergrowth and wild blooms that root the ecosystem in place.

This summer, Fielden will also be featured at Hotel Café Royal in London, where the Fielden Terrace will run from 22 July to 1 September. Tasting Notes – Hazybower
Nose: Bright citrus and blossom, hints of custard, freshly baked scones, green banana and pineapple.
Palate: Lemon tart, cream, toasted nuts, honey, and a touch of sorrel.
Finish: Fresh peppercorn and ginger, with a lingering, refreshing spiced close.
