Eden Mill Unveils Limited Ex-Pedro Ximénez Single Cask Release

Independent Scottish distiller Eden Mill has launched its first-ever ex-Pedro Ximénez single cask bottling, marking the debut of a rare series from the St Andrews-based brand. This highly anticipated release offers a glimpse into Eden Mill’s mastery of cask maturation and its commitment to creating distinctive Scotch whiskies.

Aged for nearly nine years in a Pedro Ximénez cask, this single malt boasts a deep, dark brown sherry hue. Its flavor profile is described as rich and complex, showcasing notes of fig, raisin, red berries, and a subtle hint of oak. The finish is sweet and woody, with a pleasant dryness imparted by the European oak cask.

Bottled at natural cask strength of 58.3% ABV, this release is limited to just 252 bottles. Whisky enthusiasts will have the opportunity to purchase it starting Thursday, November 21st, exclusively through Eden Mill’s website and a small allocation available at their shop on 96 Market Street, St Andrews. The release is priced at £110 per bottle.

This release comes as Eden Mill prepares to embark on a new chapter. Its new state-of-the-art distillery, located just seven minutes from St Andrews, is set to commence operations in early 2025, with plans to welcome the public in spring.
