Buffalo Trace has introduced Daniel Weller Spelt Wheat, the second release in its experimental Daniel Weller series, continuing its focus on alternative grain exploration.
The new release highlights spelt wheat, an ancient grain rarely used in whiskey production, replacing rye as the secondary grain in the mashbill. Traditionally cultivated across Europe, spelt is known for its association with small-scale farming and artisanal baking, bringing a different grain character into modern whiskey-making.
Bottled at 10 years old and 94 proof (47% ABV), the whisky emphasises grain-driven flavour, with spelt contributing subtle sweetness, nuttiness and aromatic complexity. This approach sets it apart from more traditional bourbon profiles, where rye typically provides spice and structure.

Nose: Biscuit, nutty tones, clove, cinnamon, nutmeg, caramel, light fruit

The presentation includes a 750ml clear glass bottle fitted with a compass-style stopper, referencing the legacy of Daniel Weller. Coordinates of his Kentucky farm are engraved beneath the closure, adding a historical element to the design.
Daniel Weller Spelt Wheat will be released in limited quantities across the U.S., with availability beginning this month and a suggested retail price of $549.99.
