Boann Distillery has marked this year’s Summer Solstice with a limited-edition Irish whiskey that blends historical mash bills with modern distillation innovation.
Released during a customer event at the Boann distillery in Meath, Ireland on 20 June 2025, the bottling is the latest in the distillery’s annual Solstice series – and the first in the series to vat two casks.
Boann Summer Solstice 2025 VM #7 is a triple-distilled, cask strength mixed mash bill Irish whiskey, bottled at 59.6% ABV, drawn from two distinct casks: French Oak and Oloroso, with just 554 bottles available.

Both casks were filled on 9 December 2020 and matured entirely on-site at Boann Distillery.
The whiskey is based on a historically inspired mash bill – 30% malted barley, 40% unmalted barley, and 30% wheat – a composition that reflects Ireland’s wheat boom of the late 18th and early 19th centuries, following the effects of Foster’s Corn Laws (1784), the Act of Union (1801), and Napoleon’s blockade of British grain imports.
Cask No. 2301 is an Oloroso hogshead from Montilla-Moriles, coopered by J.L. Rodriguez using seasoned butt staves with virgin American oak heads.
Cask No. 2291 is a rejuvenated French oak barrique sourced from a Premier Cru Classé château on Bordeaux’s Left Bank.
The spirit was triple distilled in custom-built copper pot stills, crafted in Siena, Italy, featuring nano-copper coated lyne arms for enhanced copper contact. Sub-coolers pull the spirit off at just 10°C, lower than industry standard, preserving delicate flavours.
The result is a rich, textural whiskey. On the nose, notes of dried fruits, milk chocolate, caramel, and toasted oak give way to fresh florals. The palate reveals pine nuts, hazelnuts, orange zest, and baking spices, while the French oak contributes structure and the wheat imparts softness and warmth. The finish is long, dry, and spiced, with peppery tannins.
Boann is a family-owned Irish distillery run by the Cooney family, whose Vintage Mashbill Project explores and revives traditional Irish whiskey recipes.
Each Solstice bottling is produced entirely on site, from mashing to maturation.
📌 The reveal follows the release of Renascence, which last month became the distillery’s first whiskey since its revival earlier this year.
Boann Summer Solstice 2025 VM #7 is available for €120 via boanndistillery.ie. Bottles come in a custom cloth bag, with a fan-shaped booklet detailing the production and historical influences.
