Tomatin Distillery Launches The Sherry Collection: A Celebration of Sherry’s Renaissance

Highland distiller Tomatin has announced the release of The Sherry Collection, a trio of single malt whiskies that highlight the resurgence of sherry in the modern drinks scene. We have previously highlighted Tomatin’s excellence in sherry cask maturation with their 12-Year-Old Sherry Cask expression.

This limited edition series is now available through specialist retailers and the distillery’s website.

A Tribute to Sherry Cask Maturation

Tomatin has a long history of using sherry casks from Jerez for whisky maturation. The Sherry Collection continues this tradition, showcasing the unique influences of Manzanilla, Palo Cortado, and Pedro Ximénez casks. This release celebrates the renewed popularity of sherry, driven by the burgeoning tapas culture and evolving consumer tastes.

The Three Expressions

Manzanilla Edition

  • Details: Distilled in 2014, finished in Manzanilla butts for two years.
  • ABV: 46%, non-chill filtered, natural colour.
  • Price: £65.
  • Tasting Notes: Aromas of sourdough bread and salty popcorn, balanced with dried fruits, chamomile tea, grapefruit, maple syrup, and salted walnut. The finish is slightly salty with warm brown butter.

Palo Cortado Edition

  • Details: Distilled in 2008, finished in Palo Cortado butts for three years.
  • ABV: 46%, non-chill filtered, natural colour.
  • Price: £95.
  • Tasting Notes: Aromas of cinder toffee and dried orange. On the palate, notes of milk chocolate, toasted fruit loaf, and Brazil nuts. The finish is tangy and complex, with hints of black tea and ginger.

Pedro Ximénez Edition

  • Details: 17 years of maturation, including eight years in PX casks.
  • ABV: 46%, non-chill filtered, natural colour.
  • Price: £150.
  • Tasting Notes: Nose of sticky toffee pudding and espresso. Palate offers lemon curd, golden syrup, dates, dried fig, and muscovado sugar. The finish is long, with notes of rum, raisin, and dark chocolate.

Distinctive Packaging

Each expression is presented in Tomatin’s classic 70cl bottle, featuring packaging that reflects the rich and rustic tones of the Scottish Highlands and the vibrant colours associated with sherry. The secondary carton’s wood grain design highlights the importance of cask finishes.
