The Macallan unveils TIME : SPACE Sherry Cask 20 Year Old

The Macallan has introduced TIME : SPACE Sherry Cask, the latest release in its TIME : SPACE Collection. The 20-year-old single malt celebrates the distillery’s ongoing relationship with Jerez de la Frontera in Spain and marks a new chapter in its partnership with sherry producer Valdespino.

TIME : SPACE Sherry Cask is the first whisky from The Macallan to use casks seasoned with Valdespino sherry wine since the distillery came under the brand’s ownership. The casks were prepared at The Macallan’s own cooperages before being seasoned at the Valdespino bodega in Jerez de la Frontera. The first 200 casks were filled in 2024, the year of The Macallan’s 200th anniversary.

The whisky brings together a selection of predominantly European oak sherry-seasoned casks, complemented by a subtler influence of American oak. It is bottled at 20 years old and 44.8% ABV.

The official tasting notes describe a sherry-led profile, beginning with raisins, figs and Medjool dates on the nose, alongside frangipane, cinder toffee and caramelised nuts. Dark chocolate and spices, including cinnamon, star anise and ginger, add further depth.

On the palate, dried fruits and ginger cake are accompanied by treacle toffee, bramble jam and chocolate-coated cherries. Cloves, cinnamon and polished oak develop towards the finish, which features warming wood spices, a touch of espresso and lingering oak.

The presentation follows the circular design of The Macallan’s TIME : SPACE Collection, intended to represent the continuous relationship between the past, present and future. The packaging takes inspiration from the Palomino grapes grown in Valdespino’s vineyards, with a golden colour referencing the Andalusian sunshine associated with sherry production.

The Macallan TIME : SPACE Sherry Cask 20 Year Old is available through The Macallan’s US website at a listed price of $1,400.

The release continues The Macallan’s focus on sherry-seasoned oak maturation, while highlighting the role of the cask-seasoning process and its connection to Jerez de la Frontera.
