Kilchoman Distillery has revealed the latest release in its celebrated 100% Islay series — Kilchoman 100% Islay Sherry Cask Matured 11 Years Old.
This new expression was distilled from the distillery’s 2011, 2012, and 2013 barley harvests and matured for a minimum of 11 years in ex-Oloroso sherry butts sourced from José y Miguel Martín in Jerez, Spain.
Bottled at 50% ABV, with no added colour and non-chill filtered, the whisky is composed of 16 individually selected first-fill Oloroso sherry casks, each chosen to highlight Kilchoman’s signature balance of peat smoke, malt sweetness, and rich sherry depth.
The barley used for this release — the Publican variety — was grown at Kilchoman between 2010 and 2014, known for producing strong, consistent yields. The resulting distillate displayed a clean, bright balance of citrus and malt character, which has matured gracefully in sherry oak.
This release combines spirit from three individual Publican harvests (2011, 2012, and 2013), each distilled separately and later vatted to create a complex yet harmonious single malt.
At Kilchoman, two distinct spirit styles are crafted: the 100% Islay whiskies, made entirely from barley grown, malted, distilled, matured, and bottled on-site at the farm distillery, and the core range (including Machir Bay and Sanaig), which uses commercially malted barley.
The 100% Islay Sherry Cask Matured 11 Year Old once again underlines Kilchoman’s commitment to true field-to-bottle whisky making — a rare and authentic expression of Islay’s terroir.
