Founded in 2020, Hinch Distillery in County Down, Northern Ireland, has just released its first own-produced Irish whiskies: Hinch Single Malt and Hinch Peated Single Malt. These are the distillery’s first whiskies to be distilled, matured, and bottled entirely on-site, marking a major milestone in its journey.
Hinch Single Malt was matured in a combination of bourbon and Oloroso sherry casks. The nose offers fresh citrus notes, while the palate brings candied apple, peach syrup, and shortbread biscuits.
Hinch Peated Single Malt, meanwhile, underwent maturation in American oak bourbon barrels, Madeira wine casks, and Oloroso sherry casks. The aroma features ashy smoke, heather coal dust, and grilled pineapple, followed by flavours of honey, black pepper, smoked rock salt, and dark chocolate on the palate.
William Stafford, Head Distiller and Distillery Manager at Hinch, commented:
“This is a milestone moment for us. For the first time, we’re releasing a whisky that hasn’t just matured and been bottled here — it’s also been distilled here. Every drop is truly Hinch from start to finish.
It’s been a long journey from cask to bottle, but these whiskies were never meant to be rushed. They’ve been created to reflect both the innovation and tradition of Irish whiskey.”
The new single malts were officially launched at this year’s Balmoral Show (14–17 May) and also was available at Dublin Whiskey Live 2025. Both expressions are now available via the Hinch online shop and selected retailers, with wider international distribution to follow.
