The Hearach Of Château Biac – A Unique Collaboration

The Hearach Of Château Biac single malt whisky is a highly limited release, fully matured in rare ex-sweet white wine casks exclusively sourced from Château Biac, a renowned vineyard in Bordeaux. This collaboration between Isle of Harris Distillery and the Asseilly family showcases a whisky unlike any other, crafted from five carefully selected casks – three from 2018 and two from 2019.

Introduced to Tony and Youmna Asseilly in 2017, the distillery embraced their vision of filling French oak casks, previously used to age their sweet white wine, ‘Secret de Château Biac’, with Harris’s island spirit. The result is a distinctive whisky that reflects the friendship between two passionate producers.

Bottled at 50% ABV for enhanced flavour, this release promises a rich and layered experience:

  • Tasting Notes:
    The whisky opens with a gentle interplay of peat smoke, liquorice, and sweet wine, followed by fresh notes of green leaves and ripe tomatoes. As the palate develops, vibrant fruit flavours emerge – ripe pears, dark plums, cherries, and tropical hints of sweet lemon and lime. Florals of spring flowers and jasmine blend with mixed spices and vanilla, leading to a smooth finish of ripe fruit, new leather, and lingering peat smoke.
